BROCCOLI AND PEAÂ SOUP
This is a bright green soup that you can adapt to suit your tastes.

Ingredients
1 small onion - chopped
1 garlic clove - chopped
a little olive oil
1/2 tsp chilli flakes (optional)
1 head of broccoli
200g frozen peas
1 litre vegetable stock
2 sprigs mint
2 sprigs basil

Place the onion, garlic and oil in a pan. Soften for 3 minutes, without colouring.
Add the the chilli flakes (if using).
Prepare the broccoli by cutting florets into small pieces. Use the stem too by cutting away the hard edge then chop the remaining stalk.
Add to the pan with the peas and stock.
Bring to the boil and simmer, covered, for 15 minutes or until the broccoli is tender.
Add the herbs and cook for a further 5 minutes.
Season well and whizz until smooth in a blender or using a stick hand blender.
Serve with a swirl of cream.

This is delicious hot or cold.
Adjust the amount of mint to your taste. Head Gardener preferred less mint to me.
