CELERY SOUP

This soup is a firm family favourite. For a super vegan alternative just miss out the bacon.

Ingredients

1 tbsp olive oil

1 head of celery, roughly chopped

1 medium onion, roughly chopped

3 rashers bacon, roughly chopped

500ml vegetable stock

​

Put the oil in a pan and add the celery, onion and bacon. Cook for a few minutes until the the onion is softened but not coloured. Add the stock and bring to the boil. Cover and simmer gently for 20 - 30 minutes until the vegetables are soft. Blend with a stick blender and then season to taste.

Adjust the thickness of the soup by adding more water or stock if necessary.
