ELDERFLOWER CORDIAL
This traditional cordial has the delicate floral flavour of fresh elderflowers with lemon and oranges to add depth to the flavour. Allow enough time to make as the elderflowers need an overnight soak.

Ingredients
25/30 heads of elderflowers
4 lemons – grated rind and juice
2 satsumas or 1 orange – grated rind and juice
3 litres boiling water
2 kg sugar
2 tsp citric acid
Shake the flower heads over a sink to remove any bugs. Do not rinse or you lose some of the flavour.
Place the flower heads, lemon and orange rind into a large bowl or pan and cover with the boiling water.
Cover with a tea towel or lid and leave overnight to steep.
The next day add the sugar, citric acid and fruit juices to the pan.
Over a gentle heat melt the sugar, stirring occasionally.
Once the sugar has melted, simmer for 2 minutes.
Meanwhile sterilise some glass bottles.
Carefully pour the hot cordial into the bottle and seal immediately.
Label and store.
Notes
These bottles should keep for up to 6 months if kept in a cool dark place.
Once opened store in the fridge.
The cordial is delicious added to a glass of fizz.
It also makes a good drizzle icing for a lemon sponge.
