GINGER FLAPJACK COOKIES

These are a super quick cookie to make and are a delicious change from traditional flapjack.


125g margarine/butter

75g sugar

1 tbsp golden syrup

75g plain flour

50g oats

1 ½ tsp ground ginger


Cream the margarine/butter, sugar and syrup together.

Mix in the remaining ingredients.

On a large lined baking sheet put dollops of mixture ( the size of a teaspoon) apart to allow room to spread.

Bake in a pre-heated oven 190c, for 8 to 10 minutes or until golden brown.

Leave to cool for 5 minutes before removing to a cooling rack.


Notes

  • These are small bite sized cookies. If you want to make larger cookies increase the cook time accordingly.

  • Chunks of crystalized ginger are delicious added to the mixture.
