So (one of) the joys of having daughter home is that creative lunches keep appearing. We have a few spare courgettes from the garden and so a delicious green soup (yes I know we like green soup!) was on today’s lunchtime menu.
It was an adaption of Lucy Watson’s “super green soup”. So we didn’t have broccoli but had the courgettes, didn’t have fresh spinach (chickens are eating that!) but had frozen. Absolutely scrumptious.
