What a surprise today has been weather wise....when I first got up this morning to let the chickens out, the sky was blue and it looked like it was going to be a fabulous day. And it stayed that way (unlike most days this week that have been so wet!)
Butternut squash soup is one of the family favourites. Head Gardener and I were lucky enough to visit South Africa many years ago. For a couple of days we stayed on a gorgeous, small, privately owned animal reserve, where we were fed quite a few things we’d never had before. But one dish we really enjoyed (& have made over and over again) is a lovely butternut squash soup.
Top tip : to make it easier to peel and chop a butternut squash, cut off both ends and prick the squash several times. Place on a microwaveable plate and microwave on high for 2 to 3 minutes. Allow to cool for a few minutes before peeling and chopping. It will be so much easier to prepare.
