Shortbread

This is a really useful shortbread recipe that I have been adapting and using for years. My favourite really quick way is to make shortbread bites. No need for a rolling pin or cutters. Just roll the dough into sausages, roughly cut into similar size chunks. Bake and sprinkle with sugar whilst hot. They are delicious with a hot drink or with a lovely fruit salad and greek yogurt. The dough is good to freeze too so I often make a double batch.
