Spring Citrus Cake

As we are having the usual bank holiday weekend weather, rather cool and blustery, I felt like a baking day! We usually have lemons and sometimes limes in the fridge so I thought I’d make a spring citrus cake. This is similar to a lemon drizzle cake but I prefer the addition of the lime and also the very finely sliced zest is cooked in the syrup, and adds a really nice touch to the top of the cake. To add the finishing touch and a little more zing to the cake, I drizzle a little glace icing using some of the lemon or lime juice over the top. We treated ourselves to the cake whilst it was warm with a little dollop of cream on the top but this is absolutely delicious with a cuppa too.
