We had a phase a few years ago of choosing a country and cooking a lovely meal based on food from the area. We have cooked food from all over the globe. Researching the food is always fun and we usually try to make things with ingredients we have got but it's not always possible.
Last weekend we resurrected the theme night! It was quite a broad theme and we chose Middle Eastern. cuisine. Some of the dishes were very simple recipes and some more complicated. One of my jobs was to make Baba Ganoush,a smoky aubergine dip. Great fun charring the aubergines, but also very smelly! We also had a Spicy Cauliflower Pilaf, plus stuffed cabbage leaves. Needless to say we over catered which I have no problem with as I ended up with rather decadent tasting packed lunches!
Delicious, colourful, aromatic and just great fun to make and eat.
