Whilst waiting for a food delivery I needed to make dinner with what was left in the fridge. We always seem to have mushrooms and courgettes in the veg drawer. (I think this is because not all of us in the house like them a lot, so they may be used more sparingly, to please all!) But if it was just Head Gardener and I they would always be used.
Anyway to make them "more acceptable" I turned them into a very delicious biryani. I like making this dish with allsorts of ingredients so it is never the same. I also love the fact that with a little prep it can be left to finish in the oven leaving time to do other things.
