Wow, Valentine’s Day been and gone already!

Where is the year going?

We don’t do huge things in our house for Valentine’s Day. Head Gardener and I usually have a favourite meal in the evening (this year we made a nice fish stew.) I often make a cake or a favourite something for Head Gardener. This can be a gingerbread, shortbread, cherry cake or a currant square, which HGs mum used to make so well. Something I’m still trying to perfect after 25ish years of being together.

This year though I thought I would try some little cupcakes (not too many). So I made a red sponge, cut out some little hearts then popped them in the middle of cupcakes cases. Then I spooned vanilla sponge mix around the hearts and cooked them as normal. I decorated them with a bit of fresh cream and a slice of a leftover red heart. I must say they look great, but how do you know where to cut or bite so you can see the red heart in the middle. We will just have to try them all to see!
