This is a sweet and sour sticky tofu (also known as General Tso’s sticky tofu). It is a very tasty and popular way of cooking tofu.
Ingredients
A block of extra firm tofu
For the marinade
3 tsp garlic - crushed
2 tsp soy sauce
1 tsp chilli flakes
½ tsp ground ginger
2 tbsp cornflour
For the sauce
2 tbsp sugar
1 tbsp white vinegar
2 tbsp soy sauce
¼ cup of water
1tsp cornflour
3 tbsp vegetable oil
Drain the tofu for 30 minutes and press to get all the liquid out.

Meanwhile prepare the marinade by mixing the garlic, soy sauce, chilli flakes and ground ginger together. Set aside.
Once the tofu is drained, cut into bite-size cubes and gently mix into the marinade. Cover and leave for an hour.

Whilst the tofu is marinating make the sauce. Mix all the sauce ingredients and set aside.

Heat the oven to 200°C 400°F. Sprinkle the 2 tbsp cornflour over the tofu and shake gently until evenly coated. Carefully arrange the tofu on a lined baking tray. Bake for 20 minutes.

Once the tofu has cooked, heat 3 tbsp oil in a frying pan and add the tofu. Coat in the oil, stirring.

Stir the sauce ingredients well and then add to the frying pan. Stir gently until boiling. The sauce will thicken and glaze the tofu beautifully. Remove from the heat and serve.

Notes
Sprinkle with sesame seeds and serve with steamed veggies and rice.
