YUMMY CHERRY CAKE
This recipe has been handed down to me from my Mum. It is one of Head Gardener's favourites.
Ingredients
350g self-raising flour
Pinch salt
175g butter or margarine
175g caster sugar
125g glace cherries – halved or quartered
½ lemon – rind
2 eggs
1 tbsp milk
Pre-heat the oven to 180C Gas 4.
Sieve the flour and salt in a bowl and add the butter or margarine. Rub together to make fine breadcrumbs.
Add the sugar, cherries and lemon rind. Stir well.
Beat the eggs and work into the mixture.
Add a little milk at a time to make a dropping consistency.
Spoon into a greased/lined 900g loaf tin.
Bake for approx. 1 hour or until golden brown and cooked through.
Remove from tin and allow to cool on a wire rack.
Notes
Sprinkle cake with demerara sugar before cooking.
If you like almonds, add 1 tbsp ground almonds to the mixture and also sprinkle with a few flaked almonds before cooking.
